Vegan Scrambled Eggs on Toast

Ingredients
1/3 block of firm tofu dried with kitchen paper and mashed
2 tablespoons of olive oil
4 tablespoons of rice or soya milk
1/4 teasp of turmeric
1 teasp of soy sauce
Salt and pepper - season to taste

Method
  • Heat olive oil on medium to high heat in a small saucepan
  • Once oil is hot add the mashed tofu and saute for about 2 mins
  • Add the soy sauce and mix
  • Add the rice/soya milk
  • Mix in the turmeric
  • Season with salt and pepper
  • Serve on two slices of wholemeal toast with organic tomatoe ketchup
  • Enjoy!
